Power Quinoa Breakfast

Wow I feel like Popeye the Sailor has nothing on me, I could lift a car after this breakfast!

I can’t wait to make more quinoa dishes this week…I made a sh** ton in my rice cooker this morning for the week! Haha

For one serving:
1/4 cup dry quinoa (rinsed)
1/2 cup water
1/2 cup almond milk
1 1/2 T chopped pecans
1/2 cup raw spinach leaves
1 egg or 2 egg whites
Sprinkle crushed red pepper to taste
Pinch of Italian seasoning
Good amount of cracked black pepper
